The short version: we don't set any. Here's the longer version.

This website sets no cookies of its own — none for advertising, and none for tracking you between visits or across other sites. We do not use Google Analytics or advertising pixels.
We do count page views, on our own server. No cookie is set and nothing is stored on your device. We record which page was viewed, the website you followed a link from (its name only, never the full address), and whether you were on a phone, tablet or computer.
We do not store your IP address. To count a person once rather than once per page, we turn your IP address and browser into a scrambled value that also includes today's date — so the same visitor counts once today, and tomorrow produces a different value that cannot be linked back to today's. It cannot be turned back into your IP address, and it cannot follow you between days or to any other website. There is nothing to opt out of, because nothing identifying you is kept.
Two small things are kept in your browser's own storage rather than in cookies. They never leave your device and we cannot read them from our server.
If you sign in as staff, a session token is also held for as long as the tab is open, and discarded when you close it. That is required for signing in to work at all.
Our contact page can show a Google Map. Google is not contacted until you allow it — before that, the map is simply not on the page, so there is no request to block. If you allow it, Google receives your IP address and may set its own cookies, governed by Google's privacy policy.
Declining costs you nothing. The address and a plain link to directions are shown either way.
The site loads its font from Google Fonts. This does not set a cookie, but it does mean Google sees your IP address when a page loads. We mention it because it is a request to a third party even though no cookie is involved.
You can change your choice at any time — nothing is locked in by answering the banner once.
You can also clear site data for this domain in your browser settings, which removes everything described above and makes the banner reappear.
